Corn Fritters

Who doesn’t love a corn fritter? Well, maybe someone that doesn’t like corn or vegetables for that matter. These corn fritters are so versatile, serve them with eggs and bacon for breakfast, make them into a quick and healthy lunch or dinner with rocket and avocado or even make little ones for an appetiser served with sweet chilli sauce. They are quick and easy to make and so yummy and make sure you don’t miss my little tip on how to stop the corn kernels from flying all over the kitchen when you cut them off the cob.

Ingredients

  • 1 cup plain flour
  • 1/4 tsp baking powder
  • 1 tsp flaky salt
  • 1 egg, lightly beaten
  • 1 tsp lemon juice
  • 3 cobs corn
  • 4 spring onions, finely sliced
  • 1/3 cup chopped coriander, or soft herb of choice
  • neutral oil for shallow frying

Add the flour, baking powder and salt to a medium sized bowl, give a quick whisk to mix. Add the egg, lemon juice and 125ml cold water and beat to a batter.

Remove the kernels from the cobs of corn. I find the easiest way to do this (without corn flying all over the kitchen) is to place a tea towel over the chopping board and then it is also easy to transfer the corn to the bowl. Got this little trick from Ina Garten ie The Barefoot Contessa.

Add the corn, spring onions and chopped coriander to the bowl and stir to combine.

Heat about 1 cm oil in a frypan over medium to high heat. When the oil is hot, add the fritter mix, flatten with the back of a spoon. How much mix you add depends on how big you want the fritters.

Cook for 2 to 3 minutes, or until golden brown, then turn and cook the other side. Once agin I like to do this with two spatulas, it helps stop the oil splashing all over the stove top.

Remove to drain on a wire rack, this keeps them crisp. I think if you drain on paper towel the bottom sweats and can get soggy. Repeat with remaining mixture.
