Eggs Kejriwal

Think of this as a spicy cheese on toast with an egg on top. It is a delicious breakfast but I think it would be perfect any time of day and it would make an “eggcelent” vegetarian dinner, although you would probably want both serves if it’s your dinner! There are many different versions of Eggs Kejriwal on the internet but this I found this version on Pinterest and it serves 2. I only made one serve as I was breakfasting alone!

Ingredients

  • 1 tbsp softened butter
  • 2 thick slices sour dough bread, or other sturdy bread
  • 2 tsp seeded mustard
  • 100 gm tasty cheese, grated
  • 1 green chilli, finely sliced, deseeded if you like less heat
  • 2 tbsp coriander, chopped
  • 1 tbsp finely chopped red onion
  • 2 eggs
  • Salt and pepper to taste

Butter the bread on both sides and lightly brown in a frying pan.

Spread the mustard on one side of the toast and transfer to an oven tray. Turn on the griller.

Mix together the cheese, chilli, coriander and onion and top the toast or toasts.

Place under the griller and grill just until the cheese is melted. While the cheese is melting, fry the eggs in the the frying pan adding any butter you have leftover. Fry until the egg white is set and crisp but the yolk are still runny.

Top each piece of toast with an egg. Season with salt and pepper and some fresh herbs if you like.
