We have been making this recipe for Zucchini slice for many years now and it’s a firm family favourite although with a glut of zucchinis in the garden sometimes it becomes too much of a great thing! The recipe is from Stephanie Alexanders the Cooks Companion and is known as Anna-Maria’s Zucchini slice. You can add 150gm smoked streaky bacon, finely chopped if you like. As for the cheese I prefer to use half parmesan, half tasty cheese but its totally up to you. Any extra can be frozen in zip lock bags and reheat beautifully in a hot oven. Enjoy x
Ingredients
- 1/3 cup olive oil
- 500gm zucchini, coarsely grated
- 1 onion, finely chopped
- 170gm freshly grated cheese
- 150gm self-raising flour
- 3 large eggs, lightly beaten
- salt
- freshly ground pepper
- 2 large tomatoes, sliced.
Directions
Preheat oven to 180 degrees celcius. Brush a 25 cm square tin with a little olive oil and line with baking paper. Combine remaining ingredients except tomato and remaining oil.
Pour into prepared tin and smooth. Cover with tomato slices and drizzle with olive oil.
Bake for about 30 minutes until firm. Cut into 8 slices and serve warm or cold.
My sister made this recipe the other day and instead of drizzling the olive oil over the top of the slice she mixed it in with the other ingredients and she said it was delicious. Hi, I made this slice yesterday from Stephenie’s cookbook, but it had a very soft gooyey consistency which seemed like it wasn’t cooked enough, so I cooked it for another 15 minutes. This made no difference so I wasn’t really happy with it. I wondered if it was because the oil was sprinkled on top instead of incorporated into the batter as I would have expected, and I thought that maybe it was a mistake in the printing.

I’m so sorry you were unhappy with the end result of this recipe. My family and friends have been making this recipe for many years and never had a problem with it. My sister does stir the oil into the mix but I just drizzle it over the top as per Stephanie’s original recipe found in her cookbook “The Cooks Companion” where it is called “Maria’s Zucchini Slice”. I’m thinking maybe your zucchini were too wet, if they are very pulpy they produce a lot of water. Some recipes suggest to squeeze out the excess water but I’ve never had a problem with it.
