Chocolate and Coconut Cornflake Slice

This is the easiest, quickest chocolate slice you can make. The original recipe calls for crushed Wheaties, I prefer it with Corn Flakes but Weet-Bix would be great as well. It makes a great lunch box filler, that’s if the kids can ever go back to school again, and is perfect for afternoon tea.

Ingredients

  • 1 cup crushed Corn Flakes
  • 1 cup desiccated coconut
  • 1/2 cup white sugar
  • 1 cup self-raising flour
  • 1 tbsp cocoa
  • 150gm salted butter
  • 1 tsp vanilla sugar
  • 1 1/2 cups icing sugar
  • Extra 1 tbsp cocoa
  • 2 tbsp hot water

Directions

Preheat oven to 180°C. Lightly grease a 22x22cm square baking pan and line with baking paper.

Place Corn Flakes, coconut, sugar, flour and cocoa into a mixing bowl. Stir to combine. Melt the butter in the microwave or on the stove top.

Add the vanilla to the melted butter. Pour over the dry ingredients. Mix well.

Scrape the mix out into the prepared tin and press down well to level.

Bake for 15-20 minutes or until cooked. While the slice is cooking make the icing. Mixing the cocoa, icing sugar and water together in a small bowl.

Pour the icing over the slice as soon as it comes out of the oven. Tilting the pan to help the icing totally cover the slice. Sprinkle the top with extra coconut.

Remove the slice from the tin while still warm and cut into squares.
