The twist is kimchi and before you think I’m crazy I must admit this was a total surprise to me as well. This little gem of an idea comes from the Small Victories cookbook by Julia Turshen. The kimchi is in no way overpowering it adds a crunch that avocado toast sometimes misses, provides a bit of heat and it’s good for you too – a win win.
Ingredients
- 1 1/2 tbsp kimchi juice
- 1 cup drained cabbage kimchi, roughly chopped
- 1 1/2 tbsp mayonnaise
- Salt
- 1 ripe avocado, halved, pitted, peeled and sliced
- 4 large slices sourdough, toastes
- a small handful of roughly chopped coriander
In a small bowl stir together the kimchi juice and mayonnaise.
Here are the ingredients for one serve of avocado kimchi toast.
Place a quarter of the avocado slices on top of each slice of toast, mash in the toast with a fork or just press on with a butter knife. Sprinkle with a pinch of salt. Divide kimchi among the toasts and drizzle each one with the mayonnaise mixture. Sprinkle with the coriander and toasted sesame seeds (if you have them I didn’t – and I don’t think you miss them). Cut toast in half and serve immediately.
I hope you give this a try even my kimchi avoiding husband really was surprised with just how good this is.
