This quick and easy recipe gives you super tasty, tender chicken to stuff into corn tortillas for simple tacos with authentic flavours. If there are any leftovers it makes a tasty topping for nachos. Use your favourite taco toppings, here I have used sliced avocado, shredded lettuce, sour cream, hot sauce and fresh coriander. Shredded cabbage, thinly sliced radish or fresh tomato salsa would all be good here. The recipe is from La Tortilleria, who make the best traditional corn tortillas and tortilla chips and for those of you in Melbourne, do yourselves a favour and visit their little restaurant in Kensington.
Ingredients
- 500gm chicken thigh fillets
- 3 large tomatoes, quartered
- 1 tbsp chipotle in adobo
- 1/2 medium brown onion, sliced
- 1 garlic clove, crushed
- 2 bay leaves
- Olive oil
- Salt & pepper to season
To Serve
- Corn tortillas (or wheat of you prefer)
- Lettuce, shredded
- Avocado, sliced
- Sour cream
- Hot sauce
- Fresh coriander

Directions
Heat oil in a large frying pan over medium heat. Sear the chicken until slightly brown but not cooked through, about 3 minutes a side. Set aside.
Puree tomatoes, chipotle and a good pinch of salt and pepper in a blender.
In a saucepan over medium heat, saute onion and garlic in a little oil until translucent, about 3 to 5 minutes.
Add in the chicken, pour the pureed tomatoes over the top to cover, then add the bay leaves.
Give it a stir and simmer on low heat uncovered for about 30 minutes, or until chicken is fully cooked and tender. While the chicken is cooking prepare your topping ingredients.
Remove the bay leaves and discard, transfer the chicken to a board. With two forks, shred the chicken and then add back to the sauce.
Heat the tortillas as per packet instructions. I like to heat them in a hot, dry frypan until hot, a little charred and soft. Wrap in a clean tea towel until ready to serve.
Place some chicken on the heated tortilla and top with your favourite toppings.
