I first came upon this recipe for baked camembert in Smitten Kitchen Every Day by Deb Perlman (f you have never heard of Deb check out her fantastic blog you won’t regret it) but have found various versions on the internet since. It’s a fantastic recipe to cook up for family and friends or even just for a decadent supper for two in front of the tv. You don’t need to buy the expensive camembert here, the first time I made it I used Coles own brand, and no need to worry about ripeness as it melts into a delicious cheesy feast.
Ingredients
- One 200 gm wheel of camembert
- 3 tsp olive oil
- 1 tsp finely chopped thyme leaves
- 1 tsp finely chopped rosemary leaves
- 1/4 tsp kosher salt (or 1/8 tsp regular salt)
- Black pepper
- 1 large garlic clove, thinly sliced
- Bread, crackers or lavosh to serve
Preheat the oven to 180° C.
With a thin, sharp knife make cuts in the cheese 3 or 4 each way a couple of centimetres deep, don’t cut all the way though.
Open up eat cut with your knife and insert a sliver of garlic inside.
Pop the cheese back in the little wooden box it came in or if like me your cheese didn’t come in one, pick a suitably sized oven proof serving dish.
Combine the olive oil, thyme, rosemary, salt and pepper in a little bowl.
Spread thickly on top of the cheese and place on an oven tray.
Bake for 15 to 20 minutes until the cheese is all melty and loose.
