Chicken, Mushroom & Snow Pea Stir-Fry

This simple stir fry is a family favourite and I’m sure it will be for your family as well. The recipe is from “Adam’s Big Pot” by Adam Liaw, winner of the second season of MasterChef Australia. One brilliant thing about this recipe is that it uses chicken thigh fillets instead of breast fillets meaning that the meat remains juicy and tender even if you over cook it a bit, the other is the minimal list of ingredients. The trick to a good stir-fry is to have all your ingredient prepared before you start cooking. Here I have turned it into a noodle stir-fry but it is equally delicious over steamed rice. Serves 4.

Ingredients

  • 600 gm chicken thigh fillets
  • 4 tbsp oyster sauce
  • 3 garlic cloves, peeled and chopped
  • 3 tbsp neutral oil ie rice bran
  • 250 gm button mushrooms
  • 150 gm snow peas
  • 1 tbsp cornflour
  • 1/3 cup chicken stock or water
  • Noodles or steamed rice to serve

Directions

Cut the chicken thighs into bite sized pieces.

Mix with 2 tbsp of the oyster sauce and set aside for 10 minutes while you prepare the rest of the ingredients. Put the noodles in a bowl and cover with boiling water from the kettle, if using.

Finely chop the garlic.

Clean the mushroom with a damp paper towel.

Half the button mushroom if they are small or quarter then if larger.

Top the snow peas and slice any large ones in half.

Mix the cornflour and stock or water together in a small bowl.

Once your noodles have separated, drain in a colander.

Now we are ready to cook. Heat the 3 tbsp of oil in a large fry pan or wok over high heat. Add the garlic and give it a quick stir.

Add the chicken and toss until browned.

Add the mushroom and toss for a few minutes until soft.

Add the remaining 2 tbsp of oyster sauce and the snow peas, as well as a couple tbsp of water if the fry pan or wok is dry.

Add in the noodles (if using) and toss until the noodles are hot.

Give the cornflour and stock a quick stir and add as much needed to thicken the sauce and coat the noodles.

Either transfer to a serving dish for everyone to help themselves or dish up in individual bowls.
