Buttered eggs or Eggs en Cocotte is a luxurious little way to cook an egg. It makes a delicious brunch or even a light dinner. The method is simple but the end product is delicious. The ingredients list below is for one egg but simply multiply for how many you are feeding.
Ingredients
- Small knob of butter, plus more for buttering the toast
- 1 egg
- Spoonful of cream
- Parmesan cheese (optional)
- Salt and pepper to season
- Fresh herb of choice
- Toast to serve
Directions
Preheat an oven to 180°C. Butter a ramekin or porcelain dish.
Crack in an egg and season with salt.
Pour over the spoonful of cream and grate over a small amount of parmesan (if using).
Cook in the preheated oven until the egg white is set but the yolk is still runny, about 8 minutes.
Sprinkle over the chopped herb of choice and serve with buttered toast. I like season the egg with a pinch of Aleppo Chilli flakes but you may prefer a bit of freshly ground pepper.
Just a little pick to show how runny and delicious the yolk is but don’t worry the whites are set, that is cream and yolk in the spoon! Next time you want to make your nearest and dearest breakfast or brunch do give this a try or simply treat yourself one morning. Enjoy. Sheryl x
