Quick & Easy Mexican Style Beans

Just as the title says this is a quick and easy way to turn a tin of beans (or your own stove top cooked beans) into a tasty Mexican style bean side. You can use the beans in any of your favourite Mexican or TexMex dishes, tacos, burrito bowls, nachos to name a few. The recipe is for a tin of beans but if you do happen to use the stove top beans use only 1 garlic clove and 1/2 an onion as they are already included in the bean cooking liquid.

Ingredients

  • 1 tin of bean of choice – not drained
  • 1 medium onion, finely diced
  • 2 cloves garlic, finely chopped
  • 1/4 cup chopped coriander
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Hot sauce
  • Salt and pepper to season

Directions

Put the tin of beans (liquid included) onion, garlic, coriander, ground cumin and oregano into a medium saucepan.

Cook over medium heat, stirring often, until the beans break down and the liquid has mostly evaporated. Being careful not to let the beans get too thick as they will thicken as they cool. Add a dash of water if it becomes too thick.

Season to taste adding a couple of dashes of hot sauce if desired.

Black beans or kidney beans are the usual beans for this recipe but here I have used pinto as thats what I had. I must apologise for the poor quality of the photo as I have said many times before down lights and photography do not agree! If you have cooked your own beans use 250 gm drained beans and use the cooking liquid to make up the 400 gm to replicate a 400 gm tin.
