Chipotle Mayonnaise

This chipotle mayo is pure magic, it turns any sandwich, burger into something totally delicious. You can customise it your level of heat tolerance by adding more mayonnaise and sour cream if it is too hot or simply adding more chipotle in adobo if you like more heat. The chipotle in adobo in the tins like this are best but can be harder to find than the chopped ones in the jar, which can be found in most supermarkets. Try it as a sauce to accompany grilled vegetables and meats, it is also delicious with roast chicken.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp chopped chipotle in adobo

Directions

Add all ingredients to a small bowl, and mix well. Taste for heat adding more mayonnaise and sour cream if it is too fierce or more chilli if you want it hotter.

And thats it! It makes the most delicious mushroom burgers. Simply BBQ or pan fry oiled and seasoned large mushrooms, thinly slice a salad onion or red onion, toast a burger or other bun. Spread both sides of the bun with chipotle mayo, add the cooked mushroom, sliced onion and finely grate over parmesan cheese, delicious!
