Honey Joys

Well, here we go again Melbourne, stage 4 restrictions for the third time! So, I thought a little sweet treat was in order for the kids home schooling again. Honey Joys are so quick and easy to make and you only need 4 ingredients and I guessing most of you will have them already. Makes 24 small Honey Joys.

Ingredients

  • 90gm butter
  • 1/3 cup sugar
  • 1 tbsp honey
  • 4 cups Corn Flakes
  • Spray oil (optional)

Directions

Preheat oven to 150°C. Line a 12 hole patty pan with paper case and you can spray lightly with oil if you wish.

Melt butter, sugar and honey together in a saucepan until frothy.

Add the 4 cups of Corn Flakes to a large mixing bowl and pour over the butter, sugar mix. Mix well but gently with a wooden spoon.

Working quite quickly spoon into paper patty cases. You can also used a gloved hand.

Bake in the preheated oven for 10 minutes and cool in the tray.

Chin up everyone, let’s hope this lockdown is over as quickly as possible…. Enjoy. Sheryl x
