This easy recipe is from the wonderful Nellie Kerrison of Relish Mama who runs wonderful cooking classes. Her business like so many has been decimated by the many lockdowns in Melbourne. So shout out to all those businesses doing it tough during this time. She not only runs a great business but has also written two wonderful cookbooks.
Ingredients
- 200 gm raw almonds (or any mix of nuts you like)
- 30 gm caster sugar
- 20 gm butter
- 1 tbsp fresh rosemary, chopped
- 1 tsp sea salt
- 1/2 tsp smaked paprika
- a big pinch of chilli flakes
Directions
Place nuts and sugar in a frying pan over a low-medium heat, stirring occasionally until the sugar begins to melt.
Add the butter, rosemary and sea salt and stir until the butter has fully melted.
Remove from the heat and stir through the paprika and chilli flakes.
Allow to cool a little and serve warm or at room temperature.
Add these to your cheese board, gift to a foodie friend or simply snack on them they won’t last long. This batch is going into work with me, on second though I better make a second batch because they won’t last five minutes there. Enjoy. Sheryl xo
