
A healthy little snack when you want something a little sweet. Recipe is from the first “Better Together Kitchen” cookbook.
Ingredients
- 1 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 shredded coconut
- 2 tbsp hemp (or chia) seeds
- 2 tbsp cacao nibs
- good pinch of salt
- 1 tbsp vanilla extract
- 1/2 cup (scant) rice malt syrup
- 1 tsp coconut oil

Method
Preheat oven to 170°C
Place wet ingredients in a small pot and heat, stirring until oil is melted (or heat in a microwave safe container). Combine dry ingredients in a large bowl.


Pour melted liquid into dry ingredients and combine quickly. Roll between two sheets of baking paper trying to get it as thin as possible without having gaps. Place onto a baking tray,


Bake for about 15 minutes, checking and turning halfway. Allow to cool completely, then break into large pieces. If the middle section doesn’t snap/break return to the over for another few minutes.

Store in a sealed container in the freezer to prevent it becoming sticky.
