Stephanie’s Zuccchini Slice

We have been making this recipe for Zucchini slice for many years now and it’s a firm family favourite although with a glut of zucchinis in the garden sometimes it becomes too much of a great thing!  The recipe is from Stephanie Alexanders the Cooks Companion and is known as Anna-Maria’s Zucchini slice.  You can add 150gm smoked streaky bacon, finely chopped if you like.  As for the cheese I prefer to use half parmesan, half tasty cheese but its totally up to you.  Any extra can be frozen in zip lock bags and reheat beautifully in a hot oven.  Enjoy x

Ingredients

  • 1/3 cup olive oil
  • 500gm zucchini, coarsely grated
  • 1 onion, finely chopped
  • 170gm freshly grated cheese
  • 150gm self-raising flour
  • 3 large eggs, lightly beaten
  • salt
  • freshly ground pepper
  • 2 large tomatoes, sliced.

Directions

Preheat oven to 180 degrees celcius. Brush a 25 cm square tin with a little olive oil and line with baking paper.  Combine remaining ingredients except tomato and remaining oil.

Pour into prepared tin and smooth.  Cover with tomato slices and drizzle with olive oil.

Bake for about 30 minutes until firm.  Cut into 8 slices and serve warm or cold.

My sister made this recipe the other day and instead of  drizzling the olive oil over the top of the slice she mixed it in with the other ingredients and she said it was delicious.  Please leave me a comment and let me know if you decide to try this delicious recipe and let me know if you drizzle the oil or mix it in!
