Delicious Gluten-free Brownies

Not only are these brownies gluten-free they can also be made dairy-free by using all dark chocolate, as oil replaces the usual butter in this recipe. They are not only delicious and super moist but easy as well, no fluffing around melting butter. You can use any neutral flavoured oil, here I have used canola but even a light flavoured olive oil would be great. The recipe calls for kosher salt if you don’t have any use at least half the quantity specified. Also, another little tip if you don’t have time to wait for you egg to come to room temperate put it in a bowl of warmish water for about 5 minutes. Recipe adapted from a Melissa Clark recipe.

Ingredients

  • 90 ml neutral oil of choice
  • 1 cup gluten-free flour
  • 3/4 tsp kosher salt
  • 1/4 tsp baking powder
  • 1/4 cup Dutch-processed cocoa powder
  • 1/4 cup boiling water
  • 85 gm melted dark chocolate
  • 1 large egg, room temperature
  • 3 tsp vanilla extract, or squirt of vanilla paste
  • 3/4 cup brown sugar, packed
  • 1/3 cup white sugar
  • 1/2 milk chocolate chips
  • Murray River Salt Flakes or Maldon, to taste.

Directions

Preheat oven to 180ºC and grease an 20 x 20 cm square cake tin. Line with baking paper leaving an overhang, so the brownies are easy to lift out.

In a medium bowl, whisk together flour, salt and baking powder.

In a large bowl, whisk together cocoa powder and boiling water until smooth. Whisk in the oil, melted chocolate, egg and vanilla.

Whisk in brown and white sugars, then fold in the flour mixture, then chocolate chips.

Scrape into prepared tin and bake until set and firm to the touch, 20 to 25 minutes. Be careful not to over bake you don’t want a dry brownie!

Immediately sprinkle the brownie with the flaky salt and let cool.

Cut into 16 squares and serve.
