Toblerone Mousse

It was Father’s Day in Australia last Sunday and I think nearly every Dad in Australia got a huge Toblerone as part of his present. In our family they all did and my Father even got two!! So, I thought it a great time to introduce you to Toblerone mousse. It’s a quick and easy mousse to make and it’s not too rich so the whole family will enjoy it. It needs about 8 hours setting time so make sure to allow for that. This quantity makes enough for 4 servings. Recipe from Beverley Sutherland Smith.

Ingredients

  • 150gm Toblerone chocolate
  • 5 tbsp water
  • 2 egg whites
  • pinch of salt
  • 1/2 cup whipping cream

Roughly chop the chocolate and place in a heatproof bowl with the water. Place over a saucepan with a small amount of water and heat over a low heat, stirring occasionally until the chocolate melts.

Remove from the heat and place the bowl in some cold water in the sink too cool quickly.

Whip the egg whites with the pinch of salt until stiff but don’t over whip you don’t want grainy here!

In another bowl whip the cream to soft peaks, there is no need to wash your beaters (or mixing bowl if using a stand mixer).

Gently start folding the egg whites and cream together then tip in the chocolate, folding as you go. Don’t over mix the mousse you just want it combined and no big bits of cream or whites visible.

Spoon into serving dishes and refrigerate covered with glad wrap for at least 8 hours. I have chosen different dishes to show you what can be used, if I was serving this to guests I’d use matching!

Decorate with whipped cream and grated chocolate if you wish.
