Dulce de leche “Sandwich” Cookies

Those of you that know me know that I don’t have much of sweet tooth, 95% of the time I’d pick savoury over sweet any day. Saying this I have a thing for salted caramel anything…… So when this recipe for Dulce de leche cookies appeared in my inbox from Nellie at Relish Mama I knew I just had to make them. I was going to buy the Dulce de leche but not so easy to do in Melbourne at the moment so after a bit of googling found this nifty method of making it in the slow cooker.

Ingredients

  • 150gm unsalted butter
  • 120gm caster sugar
  • 1 egg
  • 300gm plain flour
  • 1 tbsp dutch cocoa
  • 225gm dulce de leche
  • Sea salt

Directions

Preheat your oven to 180°C.

Using an electric mixer or beaters, combine the butter and sugar in a mixing bowl and “cream” together to combine, scraping down the sides of the bowl a few times as you go along.

Add in the egg and continue to mix until light and fluffy.

Sift in the flour and cocoa powder, add a pinch of salt and mix until combined. Add 75gm of the dulce de leche and again mix until the dough is smooth.

Form the dough into a ball and cut into four equal pieces. Roll each into a ball and wrap in cling film and place in the fridge for 10 minutes. Roll each ball into a log. Cut the log into 10 equal parts and roll these into balls.

Line baking trays with baking paper. Place the cookies on the trays and flatten to 1/2 – 1 cm thick.

Bake for 10 minutes. Allow the cookies to cool a little then transfer to a wire rack.

Add the remaining dulce de leche to half of the cookies and sandwich them with the remaining cookies.

Sprinkle with a final sprinkling of good quality sea salt.

If you don’t want to bake all the cookies at once any remaining dough can be refrigerated or frozen for another day. Instead of rolling the dough into a log and cutting it into pieces I prefer to weight out the dough so I know the cookies are as much the same size as possible, it makes the cooking and sandwiching process so much easier.
