Thumbprint Cookies

These cookies are so quick and easy to whip up and best of all you probably already have the ingredients in your fridge and pantry. They make a great homemade gift for family and friends, so perfect for this time of year. Jam is the classic filling but the Freckle makes a nice change or do both like I have.

Ingredients

  • 180gm butter, softened
  • 1 cup caster sugar
  • 1 egg
  • 1 1/2 cups plain flour
  • 1/2 cup self raising flour
  • Jam or Freckles to decorate

Directions

Preheat oven to 180°C. Place the butter and sugar in the bowl of an electric mixer and beat until light and creamy. Add the egg and beat well.

Stir through the flours and mix to a dough.

Roll about 3 – 4 tsp (20gm) of the mixture into balls. Place on a baking tray lined with non-stick baking paper, allowing room for the cookies to spread. Press your thumb or finger into the dough to make an indent. If using Freckles you can just push them into the dough.

Fill the hole with jam.

Bake for 10 minutes or until lightly golden. Leave on the tray to firm up a little and then cool on a wire rack.
