Chocolate Caramel Slice

A delicious chocolate caramel slice recipe just in time for an Easter.

Ingredients

  • 1 cup plain flour
  • 1/2 cup desiccated coconut
  • 1/2 cup brown sugar
  • 125gm butter, melted
  • 1 tin condensed milk
  • 2 tbsp golden syrup
  • 1 tbsp butter
  • 200gm dark chocolate
  • 3 tsp vegetable oil

Directions

Preheat oven to 180°c. Grease and line a 20cm x 30cm slice tin. Place the flour, coconut, sugar and butter in a bowl and mix well.

Press the mixture into the tin evenly, you can use the base of a glass to press it in firmly. Bake for 15 minute or until brown.

Place the condensed milk, golden syrup and butter into a small saucepan and cook, stirring over low heat until the caramel thickens (about 7 minutes).

Pour the caramel over the cooked base, smoothing as best as possible and bake for 10 minutes or until the caramel is golden. Leave to cool.

Melt the chocolate with the vegetable oil in a bowl in the microwave (30 second stints on medium, stirring in between). Pour melted chocolate over the caramel layer, tilting the tin to coat evenly.

Refrigerate until set and cut into slices.

It is best to use a hot knife to cut the slice. Fill a tall jug or contained with very hot water and use it to heat up your knife between each cut, wiping dry with paper towel in between. Use the heat of the knife to melt the chocolate. Enjoy. Sheryl x
