Homemade Muesli Bars

I have been making these muesli bars for many years now, they are fantastic for breakfast on the run or for a lunchbox treat.  Many of the ingredients can be swapped out to use whatever you have in your cupboard.  It’s a very quick, easy, family friendly recipe that I hope you give a try.

Ingredients

  • 125 gm butter
  • 1/2 cup brown sugar
  • 2 tbsp honey
  • 1 1/2 cups rolled oats
  • 1/2 cup self-raising flour
  • 1 cup roughly chopped dried apricots (substitute with you favourite dried fruit or a mixture)
  • 1/4 cup sesame seed
  • 1/4 cup seed of choice (sunflower, pumpkin seeds)
  • 2 tbsp chia seeds
  • 1/2 cup chopped nuts of choice (I used peanuts)

Preheat oven to 180°C (160°c fan forced), and oil and line a 20cm x 30cm slice tin making sure the paper overhangs the sides.

Melt the butter with the sugar and honey in a saucepan over medium heat.  Stir, until the sugar has dissolved but don’t let it come to a boil.

Mix the remaining ingredient in a mixing bowl.

Stir in the melted butter mixture.

Press the mixture firmly into the prepared tin and bake for 30 minutes.  Keep an eye on the mixture in the oven and if it is getting to dark or the fruit is beginning to scorch cover it with foil.

Leave to cool completely in the tin before lifting out and cutting into bars, squares, whatever size shape you wish.

Great for a snack with a cuppa, wrapped for the lunch box or breakfast on the go.
