Nigella’s Eggs in Purgatory

Nigella says this is what to eat New Years Day when you feel like hell but it is so good that I don’t recommend that you wait until you have a hangover to try it. This quantity can serve one to two people depending on the size of your frypan and how many eggs you need to satisfy your hunger.  If you wish to feed more people use a bigger pan and double up the tomatoes garlic etc.  It makes a quick and easy meal any time of the day or night!

Ingredients  to serve 1 – 2 people

  • 3 tsp olive oil
  • 1 small clove garlic peeled
  • 1/4 tsp dried chilli flakes
  • 1x 400gm can chopped tomatoes
  • 1/2 tsp sea salt flakes
  • 1 – 2 eggs
  • 2-3 tsp grated parmesan

To Serve

  • Grated parmesan or yoghurt or persian feta (take your pick)
  • Chilli oil or more chilli flakes (if you like it hot)
  • Bread

Off the heat add the olive oil to a small frypan, grate in the garlic and add the chilli.

Put the pan over medium heat and stir for one  minute.  Be careful here as you don’t want the garlic to burn. Tip in the tomatoes, add the salt and stir until it comes to the boil.

Crack in the egg or eggs and sprinkle over the parmesan.

Partially cover with a lid and let it cook for 5 minutes.  You want the egg white set but the yolk still runny.

Remove from the heat and serve…..
